Whenever we have guests we try to make a dessert. We were having an extra 10 guests for dinner so we opted on cobbler. We had peaches which we canned the week before, frozen raspberries from our garden, and some frozen blackberries we bought. We decided to make two different cobblers which both turned out great! It ended up we only had enough time to completely cook one in the Sun Oven since I had started a little late. Peach Cobbler:
1 quart-sized jar canned peaches (I canned in heavy syrup) almost drained
1/4 tsp cinnamon
2 tsp corn starch
1 tsp lemon juice

We cooked it for 30 minutes in the Sun Oven then moved it to a 425 till finished (about 10 more minutes)
Berry Cobbler:
4 cups berries (we used 2 cups raspberries and 2 cups blackberries)
1 1/4 cups sugar
6 Tbsp flour
3/4 cup water (add slowly as needed – I ended up not using any)
We cooked the cobbler in the preheated Sun Oven for about 1 hour and 15 minutes
Crust
1 cup flour
1/2 tsp salt
1/2 cup butter, room temp
3 Tbsp ice water
whisk 1 cup flour with salt (we used a food processor), mix in butter until it resembles corn meal. Slowly stir in water until dough forms (don’t add too much!). Refrigerate until ready to use.
On a side not, the video shows us having issues getting the crust on the wooden cutting board. Linde decided not to use parchment paper on the second cobbler which she did on the first one. I recommend doing that. Also, we rolled it out in our outdoor kitchen which began heating the crust up. Keep it cold until right before you are going to roll it out and put it on the cobbler.
